From mom to mom: the jam swirl cake will win your kids’ hearts, believe me!
Healthy and genuine,this jam swirl cake is perfect for both breakfast and a funny afternoon snack!
The recipe is quick and easy and you can even prepare it with your children: this immediately makes this cake one of the favorite desserts of mothers looking for activities to do with their little ones on those rainy fall days! 😉
The jam is the real star of this cake: is present both in the butter free dough, and in the decoration of the surface that makes it so special and attractive. So you have to remember this swirl jam cake when you’ll have too many jam jars in the pantry! 😀
To prepare this cake you can choose your favorite jam: in this case I used a classic apricot jam both for the decoration and for the dough, but since it is autumn, I will make it again with a chestnut jam and I will surely do it in winter using my beloved citrus jam!
You will only have to keep in mind one thing: if you use red fruit or wild berry jams such as blackberries and blueberries, the dough will take on a bluish color!
And… thinking about it: it might be a good idea to dress up this dessert for the next Halloween? What do you think? You’ll only have to add some thematic decorative elements and that’s it: I’m thinking, for example, on cookie eyes prepared with Oreo or Smarties eyes: do you agree with me?
So let’s go with the recipe: in just under 20 minutes the dough will be ready to bake!
Jam swirl cake
Attrezzature
- 22 cm cake mold
- electric mixer
Ingredients
for the cake
- 3 medium eggs at room temperature
- 70 g sugar
- 250 g apricot jam or other flavor
- 130 ml seed oil
- 270 g wheat flour
- 10 g baking powder
- vanilla
- 120 ml milk
to decorate
- 5 tablespoons apricot jam or other flavor
Instructions
Prepare the base:
- Put the eggs into a bowl, add sugar and beat with an electric mixer for 10 minutes until the mixture is light and fluffy.
- Now add the jam (spoonfuls), continuing to beat until everything is well mixed.
- Add the oil little by little beating.
- Now add flour little by little, baking powder and vanilla.
- Complete the preparation by adding the milk (always little by little).
- Turn on the oven in fan setting at 170°C.
- Pour the mixture into a buttered and floured 22 cm cake tin and level with a spatula.
- Place the jam in a pastry bag without tip or with a plain tip and create a spiral on the surface of the cake.
- Bake in the central part of the oven for 40-50 minutes. Do the toothpick test!!
- Let it cool and enjoy your swirl jam cake!
Notes
- Always use room temperature eggs – they beat up much better!
- You can use your favorite jam: either the same one for the base and the spiral, or two different ones! Keep in mind that dark-colored jams (blackberries, blueberries) give the dessert a bluish color.
