22 cm cake mold
electric mixer
for the cake
- 3 medium eggs at room temperature
- 70 g sugar
- 250 g apricot jam or other flavor
- 130 ml seed oil
- 270 g wheat flour
- 10 g baking powder
- vanilla
- 120 ml milk
to decorate
- 5 tablespoons apricot jam or other flavor
Prepare the base:
Put the eggs into a bowl, add sugar and beat with an electric mixer for 10 minutes until the mixture is light and fluffy.
Now add the jam (spoonfuls), continuing to beat until everything is well mixed.
Add the oil little by little beating.
Now add flour little by little, baking powder and vanilla.
Complete the preparation by adding the milk (always little by little).
Turn on the oven in fan setting at 170°C.
Pour the mixture into a buttered and floured 22 cm cake tin and level with a spatula.
Place the jam in a pastry bag without tip or with a plain tip and create a spiral on the surface of the cake.
Bake in the central part of the oven for 40-50 minutes. Do the toothpick test!!
Let it cool and enjoy your swirl jam cake!
- Always use room temperature eggs – they beat up much better!
- You can use your favorite jam: either the same one for the base and the spiral, or two different ones! Keep in mind that dark-colored jams (blackberries, blueberries) give the dessert a bluish color.
