SPAGHETTI WITH BASIL ANCHOVY AND CACIOCAVALLO
A simple, fast and super easy recipe for a quick lunch in the typical italian style! The perfect idea for a last minute dinner, that everyone always likes!

- 160 gr spaghetti
- 4 desalted anchovy fillets
- a basil bunch
- a pinch of red chilli pepper
- 50 g caciocavallo cheese
- e.v.o oil.
Cook spaghetti in salted boiling water and drain them “al dente”.
Meanwhile prepare the seasoning: wash basil leaves, gently dry them and finely chop them.
Chop the anchovy fillets and put them in a pan with 2 tablespoons of oil and red chili pepper: put on fire and cook for 2 minutes.
Add the basil and turn off the flame after 1 minute.
Grate caciocavallo cheese.
Drain spaghetti, pour them in the pan and mix all.
Serve immediately adding caciocavallo cheese lo directly into the serving dishes.
