Halloween Linzer Tarts

by Elena Levati

Do you know the Linzer cake? Well, if you are looking for some ideas for next Halloween, these sweets are for you! Dressed up for the party, the famous Austrian cake is transformed into delicious Linzer Tarts for Halloween!

It takes very little, indeed very little, to transform a cake into a themed sweet that can fill my little girls’ faces with joy: “monstrous” eyes prepared in 1 minute with white chocolate covered hazelnuts and a point of melted dark chocolate!

Linzer cake is, among tarts, one of my favorites because it has a rustic soul thanks to the mix of white and brown sugar and the presence of many hazelnuts in the dough. The unique feature of this dessert, moreover, is the usage of hard-boiled egg yolks for the shortcrust pastry that give it a truly special texture and the aroma given by the spices (cinnamon and cloves)!

If you haven’t had the chance to try this dessert yet, it’s time to do it!

For the filling, you can choose between the classic and traditional redcurrant jam or prefer raspberries or cranberries. The delicious and tasty result is guaranteed in any case.

Just two words… or a few more…

Finally, allow me to add just two words before moving on to the recipe: if you have been following me for many years, you know that I have never been inactive for so long as I have been in the last few months.

I apologize to all those who expected my recipes and I also apologize to those who follow me on social media and have seen me completely disappear… Well… let’s say that I am going through a period of change in which, for various and different reasons that it would be superfluous and out of place to explain, I wanted to detox from social media and return to a more real, true, natural and intimate dimension.

I am very tired of certain dynamics, tired of working so hard to get very little in human (and economic) terms, tired of having to be subjected to judgmental looks, tired of necessarily having to reach some standards (and I’m not talking about quality standards) to be taken in consideration… Tired, in conclusion, of a world made of appearances that really doesn’t belong to me and to which I feel completely alien.

This is why I wanted to go back to the origins, to 2008, when I started, a bit for fun, to write and share recipes on my blog without work pressure, without sponsors and without an euro. I go back to the beginning, without deadlines, without keywords and SEO. For the moment I need to go back to that Elena who cooked for passion and for love, for pure pleasure and according to the inspiration of the moment.

This is why I will be here, I can’t tell you with what frequency, but I will be here, as in the beginning, in my most natural essence.

Cuisine austriaca
Servings 6 tarts of 10 cm

Ingredients

For the linzer tarts:

  • 80 g toasted and peeled hazelnuts
  • 70 g shelled hazelnuts
  • 100 g white sugar
  • 30 g brown sugar
  • 150 g flour
  • 1 pinch of salt
  • 150 g diced very cold butter
  • 3 hard-boiled egg yolks L size eggs
  • 1/2 teaspoon cinnamon
  • 1 pinch of powdered cloves
  • 1 natural lemon
  • flaked almonds
  • 200 g red currant jam or raspberry or cranberry

To decorate

  • 12 white chocolate covered hazelnuts for the eyes
  • 50 g dark chocolate

Instructions

  • Prepare the shortcrust pastry for the Linzer tarts: chop the hazelnuts very finely together with white sugar and put them into a bowl.
  • Add brown sugar, the flour, the pinch of salt, the cinnamon, the cloves and the grated lemon peel: mix.
  • Now add the very cold butter and the hard-boiled egg yolks and start working the dough in the bowl: as soon as it starts to compact, transfer it to the pastry board and finish the preparation.
  • Form a ball, wrap it in plastic and put it in the refrigerator for 2 hours.
  • After the resting time, line 6 tartlet molds of 10 cm in diameter.
  • Fill them with two tablespoons of jam and decorate with rolls of dough: the idea is to form an irregular grid, as if the rolls were mummy bandages.
  • Decorate the outline of your Linzer Tarts with flaked almonds and put back in the refrigerator for 1 hour.
  • Turn on the oven at 170 °C in fan mode and cook the tartlets for about 20 minutes.
  • Let them cool completely and, in the meantime, prepare the eyes: melt the dark chocolate in the microwave and use it to draw a dot in the center of the chocolate-covered hazelnuts.
  • Decorate the linzer tarts with the little eyes and enjoy them!

Notes

  1. The next day they’ll be even better!
  2. They can be stored at room temperature covered with aluminium foil: they remain perfect for 4 days.
  3. As an alternative to the chocolate-covered hazelnuts, you can use smarties, sugar sprinkles or white sweets to make the eyes (always with a dot of chocolate!).
