A volte non so più se sono più bambini i miei bambini del nido o il mio eterno bambinone compagno di vita. Vi sembrerà strano ma mangiano più volentieri e con meno fatica la frutta loro, che sono piccoli e schizzinosi, rispetto a Lui che vanta quasi 30 anni di vita…

E allora, come con i bambini, si nasconde “l’oggetto del dissapore” tra altri ingredienti: li si modifica un po’, si schiacciano, si frullano, si rendono più golosi, gli si cambia la forma e voilà… la frutta è servita! Per colazione, ma anche per merenda… nel nostro caso, essendo più grandicelli, ci sta anche come accompagnamento al caffè.

PLUM CAKE DI BANANE E NOCI PECAN

(Da una ricetta di Brian Glover)


Ingredienti:

  • 400 gr banane molto mature (circa 4),
  • 125 gr burro a temperatura ambiente,
  • 170 gr zucchero di canna,
  • 2 uova,
  • vanillina,
  • 100 gr noci pecan,
  • 250 gr farina,
  • 1/2 bustina di lievito per dolci.

Preparazione:

  1. Sbattete il burro con lo zucchero usando le fruste elettriche per una decina di minuti fino ad ottenere una crema chiara e leggera.
  2. Aggiungete un uovo alla volta e continuate a lavorare ottenendo un composto spumoso.
  3. Schiacciate le banane con una forchetta e aggiungetele all’impasto.
  4. Unite anche le noci tritate grossolanamente e la farina miscelata con il lievito e la vanillina.
  5. Amalgamate bene, quindi versate l’impasto in uno stampo da plumcake e cuocete in forno già caldo a 180 °C per un’ora circa.

Consiglio:

  • Le noci pecan danno un tocco di sapore in più al cake rispetto alle noci classiche.
  • Più le banane sono mature, più la torta sarà buona e profumata!

BANANA AND PECAN NUTS PLUMCAKE (by Brian Glover)


Ingredients:

  • 4oo gr very ripe bananas (about 4),
  • 125 gr butter at room temperature,
  • 170 gr brown sugar,
  • 2 eggs,
  • vanilla,
  • 100 gr pecan nuts,
  • 250 gr flour,
  • 1/2 sachet of baking powder.

Method

  1. Beat the butter with the sugar using electric beaters for about 10 minutes until you have a clear cream.
  2. Add eggs (one by one) and continue to beat getting a frothy mixture.
  3. Mash bananas with a fork and add them to the mixture.
  4. Add also coarsely chopped pecan nuts, flour, baking powder and vanilla.
  5. Pour your dough into a plumcake mold and bake in a preheated oven at 180 °C for about one hour.

My advice:

  • Compared to normal nuts, the Pecan nuts add a touch of extra flavor to the cake.
