Torta nera al cioccolato con le pere intere

Un abbinamento classico Pere e Cioccolato in una veste tutta nuova: ed ecco nascere la mia torta nera con le pere intere elegante e perfetta per una cena speciale!

Ogni prologo sarebbe superfluo. Solo attraverso la sua ricetta posso presentarvela e raccontarvela al meglio.

E allora, signore e signori, rimboccatevi le maniche e preparate i grembiuli perchè oggi si lavora!

Bisogna preparare un impasto montato morbido al cacao e le pere sciroppate che poi andranno private del torsolo e riempite con un composto di biscotti e cioccolato.

TORTA NERA CON LE PERE INTERE


Ingredienti:

  • Per le pere sciroppate: 5 pere decana, 800 gr acqua, 400 gr zucchero.
  • Per il ripieno delle pere: 10 biscotti secchi, 10 amaretti duri, 60 gr cioccolato fondente, 1/2 bicchierino di brandy
  • Per la pasta: 15o gr burro morbido, 160 gr zucchero, 1 cucchiaio di miele, 3 uova, 3 tuorli, 75 gr farina, 65 gr fecola, 35 gr cacao, 1/2 bustina di lievito per dolci.

Preparazione:

  1. Pere: Fate bollire per 5 minuti lo zucchero e l’acqua in una pentola a bordi alti ottenendo uno sciroppo. Sbucciate le pere lasciando il picciolo. Detorsolatele partendo dalla base e mettetele a cuocere in piedi per 10 minuti nello sciroppo. Scolatele su carta assorbente e fatele raffreddare. (conservate lo sciroppo per una buonissima frutta cotta!). Tritate grossolanamente i biscotti e il cioccolato, bagnate con il brandy e riempite con questo composto le pere poi mettetele in piedi ben distanziate in una tortiera tonda di 22 cm di diametro con bordi sganciabili ben imburrata e infarinata.

  2. Preparate l’impasto montato: lavorate con le fruste elettriche il burro ottenendo una crema soffice, aggiungete lo zucchero e il miele e lavorate ancora per almeno 15 minuti. Aggiungete poi le uova e i tuorli uno ad uno, sempre lavorando, e sbattete ancora 15 minuti fino a che il composto sarà ben chiaro e spumoso. Unite infine la farina setacciata con la fecola, il cacao e il lievito poco per volta con una spatola con movimenti molto delicati per non smontare il composto. Versate con un cucchiaio questo impasto nella tortiera tutto intorno alle pere, livellatelo delicatamente e fate cuocere in forno già caldo a 180° per 50 minuti eventualmente coprendo la torta con un foglio di alluminio dopo 45 minuti se scurisse troppo.

Consiglio:

  • E’ importantissimo utilizzare uova a temperatura ambiente che si montano molto meglio e avere pazienza nella lavorazione dell’impasto: più è prolungata più la torta sarà soffice.
  • Si può servire con panna semi montata o con una purea di pere.

BLACK CAKE WITH WHOLE PEARS


A classic match in a total new dress: and here come my black cake with whole pears. Any prologue would be superfluous. Only through its recipe I can present and explain it at best. And so, ladies and gentlemen, roll up your sleeves and take your aprons because today you have to work!

Ingredients:

  • For pears in syrup: 5 pears type Decana, 400 gr sugar, 800 gr water.
  • For the filling of pears: 10 biscuits, 10 amaretti biscuits, 60 gr dark chocolate, half glass of brandy
  • For the dough: 150 gr soft butter, 1 tablespoon of honey, 160 gr sugar, 3 eggs, 3 egg yolks, 75 gr flour, 65 gr potatoes starch, 35 gr cocoa, half sachet of baking powder.

Preparation:

  1. Boil for 5 minutes water with sugar in a saucepan with high edges getting a syrup. Peel pears, leaving the stem. Remove the core starting from the bottom and put the pears to cook in the syrup for 10 minutes. Drain on kitchen paper and let cool (keep the syrup for an other recipe, for example for a very good cooked fruit!). Chop coarsely cookies and chocolate, add brandy and use this mixture to fill pears then put them on foot well spaced in a 22 cm round cake pan well buttered and floured.
  2. Prepare the whipped dough: beat butter with electric whips getting a soft cream, add sugar and honey and beat again for at least 15 minutes. Then add eggs and egg yolks one by one, always beating, and continue again 15 minutes until the mixture is light and fluffy. Finally add the flour mixed with potato starch, cocoa and baking powder little by little using a spatula (be very delicate to not take down the mixture). Using a spoon, pour this mixture  into the pan around pears, gently. Bake in preheated oven at 180° for 50 minutes eventually covering the cake with aluminum foil after 40 minutes if it browns.

My advice:

  • It’s important use eggs at room temperature and have patience in beating your dough: more is beated, more the cake will be soft.
  • You can serve it with whipped cream or with a pear purea.

Elena, io potrei fare qualsiasi cosa (lecita ovviamente 😀 ) per impossessarmi della torta con alzata, e se non riuscissi ad averle potrei trasformarmi in “alzata con pugno” 😀
Meraviglioso tutto..sssssssssssssst ma..quando un bebè? 😉 Si, ho capito, mi faccio gli affaracci miei 🙂
