Risotto alle noci

E’ inutile negarlo: questo risotto alla noci e mascarpone è inconfutabilmente, inesorabilmente e fuori da ogni dubbio una bomba calorica!

Ma, mi dico… se bisogna sgarrare, che almeno lo si faccia per bene!

E allora, miei cari e mie care, gustiamoci questa vagonata di calorie porgendo tanto di cappello. E facciamolo col sorriso sulle labbra, pensando che domani, almeno qualcuna di quelle calorie rimarrà in palestra sul tapis roulant o sul marciapiede se preferite il running!

Io non faccio testo perchè ancora non sono ancora andata nè in palestra nè a correre e questo risotto delizioso me lo sono mangiata lo stesso!

Nota: In questo caso ho utilizzato la pentola a pressione per limitare il consumo energetico,  ma ovviamente potete preparare il risotto anche nel tegame tradizionale.

RISOTTO ALLE NOCI E MASCARPONE


Livello: facile Tempo: 15 min Dosi: 4 persone


Ingredienti :

  • 360 gr riso carnaroli,
  • 720 gr brodo di verdure,
  • 250 gr mascarpone,
  • 1 scalogno,
  • 1 bicchiere di vino bianco secco,
  • 12 noci,
  • olio extravergine d’oliva.

Preparazione:

  1. Affettate lo scalogno finemente e fatelo soffriggere in un paio di cucchiai di olio nella pentola a pressione.
  2. Non appena si colorisce, salate e versate il riso. Fate tostare per 2 minuti, bagnate con il vino e fatelo evaporare.
  3. Coprite il riso con tutto il brodo caldo e chiudete la pentola a pressione.
  4. Alzate la fiamma al massimo, quando fischia abbassate al minimo e calcolate 7 minuti esatti.
  5. Spegnete, fate raffreddaresubito la base della pentolasottoacqua corrente, aprite e mantecate il risotto con il mascarpone.
  6. Aggiungete un pizzico di noce moscata, uno di pepe e aggiustate di sale.
  7. Unite infine le noci tritate grossolanamente a coltello e servite.

Consiglio:

  • Provate a sostituire il vino bianco con del rosso intenso: il piatto acquista una nota più dura che sono sicura vi piacerà!

You can’t deny it: this nuts and mascarpone risotto is without any doubt a calorie bomb!

But, I say … If we have to be guilty of the sin of gluttony, do it in the best way!

So, my dear ladies and gentleman, let’s enjoy this ton of calories and take your hat off! And let’s do it with a smile on your lips, thinking that tomorrow at least some of those calories will remain on the traedmill in the gym or on the sidewalk if you prefer the running!

….Mmm… But honestly speaking: I’ve not been to the gym yet! Shame on you Elena! Shame on you! 🙂

RISOTTO WITH WALNUTS AND MASCARPONE


Leve: easy Time: 15 mins Serves: 4 pp


Ingredients:

  • 360 gr carnaroli rice,
  • 720 gr vegetable stock,
  • 250 gr mascarpone cheese,
  • 1 shallot,
  • 1 glass of dry white wine,
  • 12 walnuts,
  • extravergin olive oil.

Preparation:

  1. Slice finely shallots and fry it in 2 tablespoons of oil in the pressure cooker. As soon as it became coloured, salt it and add the rice.
  2. Tost it for few minutes always mixing, wet with wine and let evaporate. Cover rice with all the hot stock and close the pressure cooker.
  3. Raise the maximum flame, when whistle lower to a minimum and calculate 7 minutes.
  4. Turn off, let cool immidiatly the base of the pot under running water, open and add the mascarpone cheese. Mix well.
  5. Add a pinch of nutmeg, pepper and salt.
  6. Finally add the nuts coarsely ground and serve the risotto.

My advice:

  • I used the pressure cooker, but obviously you can prepare the risotto in the traditional pan.
  • Try to replace the white wine with an intense red one: your risotto will gain in flavour. I’m sure you’ll love it!
